Parera King is a grape beer -or a malt wine- made in collaboration with Finca Parera, a biodynamic viticulturists of our town: Sant Llorenç d’Hortons.
It is a Wild Grape IPA product of the joint fermentation of an Indian Pale Ale must and a 2019 Xarel·lo must (grape variety used to make white wine and sparkling wines). The fermentation took place with the combination of the grape’s own yeasts with brewing yeasts, with long cold maturation and a second fermentation in the bottle in a process that lasted 9 months. The result is an orange beer with persistent foam, 9 degrees imperceptible with aromatic notes of white fruit and floral typical of Xarel·lo wine combined with the herbaceous notes of Amarillo hops. We also find touches of bread, pastries and dairy products from fermentation with wild yeasts.
In the mouth it is soft and silky with a slight bitterness that reminds us of beer. In short, we are dealing with a product of high organoleptic complexity and yet balanced and smooth, suitable for all palates and that combines the best features of a good Xarel·lo with the best of hops beers. Perfect to pair with light and refreshing summer meals and enjoy a genuine, earthy product.
