BREWING PROCESS

MILLING

Barley malt is germinated barley that has been dried and toasted. Milling crushes the grain ready for mashing.

MASHING

Beer is 95% water, so its quality has to be ensured by softening, dechlorination and reverse osmosis. Mashing involves heating to around 65º C for about an hour and a half, mixing the water and barley malt to extract the sugars in it and obtain a sweet liquid known as wort.

BOILING

The preceding processes produce a sweet wort which is boiled for 90 minutes. The hops are added during this process. More specifically, it is the flower of this climbing plant that is added, providing the bitterness and fruity and citric aromas one can taste in our beers.

FERMENTATION

The wort is poured into the fermentation vessel at a temperature of 24º. The yeast is added at this point. This is the living organism that produces the fermentation, converting the sugars into alcohol and carbon dioxide in a process that lasts from one to two weeks.

CONDITIONING

Once the fermentation is complete, the beer undergoes a process of cold conditioning, in which the green beer is stored for approximately two weeks at a temperature between 0-2º. This removes the haziness and matures the flavours and aromas.

BOTTLING

Finally, the beer is bottled for distribution.

Blonde Ale

This is pale and golden in colour, translucent, with a lingering white head. Its intense, clear, fruity aroma, is particularly striking for its notes of citric and sour tropical fruits, hints of white grape together with notes of watermelon. It is fresh on the palate, with undertones of exotic fruits. Integrated carbonation with a slightly bitter farewell, inviting further tasting.

The Espiga Black IPA is black in colour, with a creamy, lasting, light-brown head. The aroma is striking for its resinous, herbaceous and citric notes produced by the different hops, together with undertones of toasted malt and chocolate.
